sunday mornings at home ♥️ things i’m grateful for in this moment: all of my sisters together under one roof, a much-needed weekend of fun, and a very doughy chocolate chip vegan breakfast cake waiting to be sliced into (i’ll be sharing soon, promise!). life is good ✨ to hold you over i’ll drop a recipe below for these adorable paleo snacking loaves that i teased a few weeks ago. they’re fluffy, hearty, and i can easily eat the entire batch in one sitting so who’s the real winner here?? 😁
paleo snacking loaves (this made 4 mini loaves, so adjust accordingly): 3 eggs
1/4 cup olive oil
3 tbsp male syrup
blend together in a food processor until smooth (can whisk by hand)! add: cup almond flour
3 tbsp coconut flour
3 tbsp ground flax
pinch of baking powder
blend until well combined. pour into mini loaf pans and top with seeds of choice (i usually do sunflower, pumpkin, and chia). bake at 350 for about 20 minutes.

2. Your journey is not about how quickly you can get to a certain place, if you're focused on that, you are missing the point of the journey & learning nothing, every part needs to be experienced, that includes enjoying the chill days.
Now that you've thought about it, 🗣Speak to yourself.

Look how far I'm coming in my life journey & growth, my life is not about productivity & perfection, it's about the journey. On today’s episode of steph accidentally dying her body orange: squash fudge brownies. Not over it!!! Also if you don’t like nuts on your brownies I don’t think we’ll get along mmk .
1 cup mashed squash of choice (I like roasted butternut, pumpkin purée, or do sweet potato instead), 1 cup liquid (I do half nut butter half apple sauce cause I’d go broke), 1/4 cup cacao powder, 1/2-2/3 cup sugar of choice, 1/3 cup flour of choice (I do oat or almond), pinch salt/baking soda/vanilla. Mash it all up, add some choc chips and nuts, and bake at 350!! yay
It’s soup season so I of course had to kick it off with my FAVORITE soup recipe - roasted cauliflower cheddar soup 😍 I actually really don’t enjoy cauliflower most of the time, but this soup is so creamy and flavorful that you really don’t get a lot of that cauli taste. My variation came to about 3sp/serving for 6 big servings.
🥘 1 medium head of cauliflower
🥘 3 cloves of chopped garlic
🥘 1 pkg mirepoix (original recipe calls for just onions and celery if you prefer that!)
🥘 3.5 cups broth of choice (I used half chicken bone broth and half hearty vegetable broth)
🥘 1T fresh thyme leaves
🥘 1 cup shredded cheddar (I used @traderjoes lite 3 cheese blend, but the sharper the better!)
- Chop cauliflower and garlic, toss with a little bit of olive oil and salt/pepper. Roast for 30min at 400, mixing halfway through
- Heat about 1T olive oil in a large pot; add the mirepoix and sauté for 5 min
- Add broth and thyme. Bring to a boil, then let simmer for 20 min
- Remove from heat and blend with an immersion blender to desired texture. Stir in shredded cheese and serve!
**I add some bacon bits for 1 extra point because it’s the BEST
There is something about surrounding yourself with people who inspire and challenge you. ————————————————— We can spend too much of our life surrounding ourselves with people who aren’t good for you or you’ve simply outgrown. As much as “school” friends hold a nostalgic element to your life, it doesn’t mean they are the types of people that help you through life. ————————————————— Sometimes when you grow older you see this more and you act upon it. Setting yourself to challenge and inspire yourself with the right people can take time but it’s a journey worth taking. ————————————————— Recently I personally took time away from social media to have a good look at who I was interacting with, how I was implementing myself into situations and what affect my surroundings had on me. I came back with the realisation that (with social media for sure) I would move away from people who weren’t helping my mindset and my way of living. It never felt like a shun or a block it felt like a simply little swift exit from the party that I had long outstayed my welcome. I wasn’t going to be missed from something I spent most of my time sitting in the corner of. ————————————————— I now surround myself with people who I find inspiration from or find joy and happiness from. Good friends and acquaintances that I can share my life and interests with.
This was one step to inspiring me to start this podcast and also a reason why I am not rushing it. I’m piecing it together and finding the right time and people to make it work. Creatively it’s the best thing I’ve done for a long time. It’s invigorated my love of podcasting and even blogging whether it be making them or simply listening / reading them. ————————————————— Amy Poehler is an extremely wise and inspirational person. Would we prefer to walk amongst a garden of the exact same flower or explore a garden of a billion varieties? Which feels more inspiring, exciting, bountiful? How would it look if every single flower got petal fillers and silicon enhanced stamens until all the varietals blended into one? What would happen if they all stopped drinking in too much sunlight so they could be more delicate and frail, less powerful and bright? What if each flower stooped low, stayed closed; afraid to open fully, ashamed of its inadequacy in comparison to the other flowers?
How would the garden look if each flower felt emboldened enough to open up and joyously share its unique height, shape, curves, lines, colours and textures, proudly honouring the gift of life?
Let’s gently invite ourselves to realise that the time spent sifting through the wreckage of comparison could instead be spent creating, sharing, connecting. How would it feel to hug ourselves and appreciate ourselves with the warmth, celebration and delight we greet our friends with? From that place, from an internally friendly peaceful place, how far could we go and how brightly could we shine?
