Feeling good after my first workout for the year the other day and excited to get back into regular training. I feel like I have said that too many times the last few months lol.. but finally no more distractions (for now) and life getting in the way😂
When life does gets extra busy and you can’t find time to exercise or just don’t have the energy to.. don’t stress! There’s plenty of time ahead and in the future to get back into routine. Listen to your body, use the time as rest and start fresh✨

Chewing-styled Chinese food 🥢
Recipe included 🍽
- 1/2 yellow onion, julienned🧅
- 1 firm tofu, cut into long blocks
- 1/2 red bell pepper, cut small - 2 baby corns, sliced fine 🌽
- 1/4 carrot, sliced fine🥕
- thumb size ginger, sliced fine
- 4 button mushrooms, sliced fine
- Long beans, sliced to about 1 1/2 inches
- 1 Spring onions, sliced fine
- Soy sauce
- Dark soy sauce
- Salt and pepper🧂
- Sesame seeds - Rice🍚
First up, cook your rice! 🍚 Next, heat up a wok and add a little bit of olive/vegetable oil. Add the yellow onions, ginger and mushrooms into the pan. Saute them until they get some nice colour then add the red bell peppers, baby corns, carrots and long beans.🥕🌽🧅 Give the wok some good toss and make sure all the ingredient are cooked through. Add some water until it lightly cover the ingredients in the wok. Bring it up to a boil 🔥Add soy sauce and also dark soy sauce for the colour. Don’t forget to add the tofu too! ✨Season it to taste with salt and pepper and simmer it for 10 mins. This is to ensure the tofu absorbs all those amazing flavours. 🌟
Lastly, serve on top of a bowl of rice with some spring onions and sesame seeds sprinkled over. 🥄

Homemade pan-fried veggies steamed bun - Sheng Jian Bao '生煎包' 🥟😍
Recipe (yields 20-25 small buns)
~ 1 3/4 cups all-purpose flour
~ 1 pack active yeast (2 1/4 teaspoon)
~ 3 teaspoons sugar
~ 3 teaspoons oil
~ 2/3 cup warm plant-based milk
~ 4 cups finely shredded cabbage
~ 1 cup chopped kale
~ 7-8 mushrooms, soak until soft & slice thinly
~ 1 carrot, finely chopped
~ 2 teaspoons thinly sliced ginger, 3 cloves minced garlic
~ 2 tablespoons soy sauce, 2 teaspoons stir fry sauce, 1 teaspoon sugar, a pinch of white pepper
~ salt, oil, sesame oil, minced ginger, chopped scallions
Mix flour, yeast & sugar in a bowl, then add-in wet ingredients. Using a dough hook, knead the mixture until a soft dough forms. Turn dough onto a floured surface, & knead for 4-5 minutes until you see a smooth top. Let the dough rest in a bowl for 30 minutes, covered.
Meanwhile, in a heated pan with 2 teaspoons oil, sauté ginger, mushrooms & garlic until fragrant. Add cabbage & sauce, cook for 2 minutes & spoon mixture into a bowl. Continue to sauté kale with a little oil & salt, then add to cabbage mixture along with chopped scallions, minced ginger, carrot & drizzle of sesame oil.
To make the buns, turn dough onto a floured surface & roll into a log. Divide log into 20-25 pieces & roll each one into a ball. Take 1 dough & flatten it slightly with your palm, then using a roller, roll it to about 3 inches round by leaving a good thickness in the middle. Place a heaping tablespoon of filing & pleat to seal.
In a heated pan with a drizzle of oil, place buns sealed side down & pan fry for 30 secs until the bottom turns light brown. Slowly add in hot water to cover ~1/3 of the buns, place lid over & turn heat to low-med. Cook until all water is absorbed.
Serve warm with homemade chili oil in soy sauce.

Vegetable Curry Noodle Soup 🍜🌱
1 tablespoon coconut oil
3 cloves garlic, minced
1 tablespoon ginger, minced
1/3 cup of diced white onion
2 ½ tablespoons red curry paste
30 oz coconut milk (2 cans)
1 cup vegetable broth
8 oz rice noodles
2 cups broccoli florets
1 red bell pepper, thinly sliced
1-2 carrots (depending on size), chopped
1 cup of frozen green beans
1/2 tablespoon lime juice
Sea salt, to taste
fresh cilantro, to serve
1. In a soup pot heat coconut oil on medium and saute your onions, garlic and ginger until onions are translucent.
2. Add your red curry paste and your coconut milk and stir until combined.
3. Add your carrots and bell peppers, your vegetable broth and your lime juice. Bring to a boil then reduce to a simmer (med-low) and cook for 15 mins.
4. In a separate pasta pot cook your rice noodles according to package instructions.
5. In your soup pot add your broccoli and frozen green beans and continue to cook on med-low until broccoli is tender (approx 10 mins).
6. Ladel your soup into a large bowl, add your noodles and garnish with a pinch of sea salt and fresh cilantro.

🍝😍 Pappardelle with Lentil & Mushroom Ragù! 📷 by @happyskinkitchen 🚨🚨MUSHROOM & LENTIL RAGU Recipe: 2 tablespoons olive oil for frying
1 small white onion, finely chopped
2 medium-sized carrots, finely chopped
1 pack of Mushroom Mince
3 cloves garlic, minced
1cup of cooked brown lentils
1 tin of chopped tomatoes or Italian passata
3 tablespoons tomato paste
2 teaspoons fresh thyme leaves + extra for sprinkling
1/4teaspoon salt, or to taste
1 tablespoon of dry basil
1 teaspoon of miso paste (optional but adds a depth of flavour)
Pasta of your choice
For the Almond Parmesan:
1/2 cup raw almonds
1/4cup nutritional yeast
sea salt to taste
1teaspoon olive oil
1teaspoon of white miso paste (optional but add an extra cheesy/salty flavour)
Start by making the almond parmesan. Simply place all the ingredients into a food processor and blitz until you have a crumbly kind of consistency. Set onto one side while you are making the sauce.
Heat the olive oil in a large pan over a medium heat. Add the onion and carrots. Cook for about six-eight minutes, until the onion starts to turn translucent. Add the crushed garlic and cook for another minute, stirring from time to time to prevent from burning.
Add the mushroom mince to the pan and keep on cooking for four to five minutes.
Add the lentils, tomatoes, tomato paste, salt and all the herbs to the pan. Stir the mixture well, and bring it to a boil. Reduce it to a simmer and cover. Cook for 30 to 35 minutes on a very gentle heat. If the sauce becomes too thick add a splash of water.
When the sauce is 15 minutes from being done, heat a large pot of salted water to boil. Add the pasta and cook according to package instructions. Drain the pasta and add a splash of olive oil to prevent from sticking.
Divide the pasta into bowls and top with the bolognese sauce. Serve the pasta with some extra fresh thyme, cracked black pepper and the almond parmesan.

most soybeans are grown to feed animals. I agree there’s an issue with the way we grow food. But it isn’t realistic to think veganism is the cause of this issue ,specially when within the community there is probably the most ppl advocating for buying from small farmers & organic

Recipe: Recipe for 1 aubergine:
2 tsp miso paste
2 tsp soy sauce
1 tsp maple syrup
1 tsp sesame oil
1/2 tsp garlic
1 tbsp water
Cut the miso lengthwise and make small squares. Spread the miso dressing on top and bake in alumnium foil for about 30 minutes on 200 degrees, or check until the flesh is soft.
I served them with brown rice, edamame, shiitake mushrooms, avocado, cilantro and lime.
