VEGAN PAD THAI ✨

Recipe is very easy, I just explain everything thoroughly for you guys!
Recipe serves 2-3
7-8 ounces rice noodles
2 tablespoons avocado oil or vegetable oil
4 garlic cloves, minced
1/2 container baked tofu or firm tofu
4 green onions, cut into 2-inch strips
1 cup bean sprouts
1/4 cup dry-roasted peanuts, chopped
4 tablespoons soy sauce
4 tablespoons cane sugar sugar
1 tablespoon lime juice
1 tablespoon rice vinegar
1 tablespoon Sriracha
2 tbsp pure tamarind paste OR (you can make your own… I did! 6 sweet tamarind pods + 1 cup hot water: in this case use 4 tbsp of the homemade tamarind paste)
Notes: -Tamarind paste is sometimes difficult to find thats why I like making my own! It is easy to make too! *DON’T skip the tamarind paste. Its the primary flavor in pad Thai! -You could find tamarind pods in an Asian grocery store and sometimes even regular grocery stores too! -If you buy the rice noodles in an asian market buy the “rice sticks; pho noodles” or at a regular grocery store they are typically just called either Pad Thai noodles or rice noodles.
1.If you have chosen to make your own tamarind paste, take off the shell of 6 tamarind pods then place in a bowl with 1 cup of hot water. Let sit for 5 minutes then using a large fork break down the tamarind, smashing it and mixing…it should create a lumpy sauce, Mix until it becomes a bit smoother…you will see the seeds & a bit of lumpiness.
2.Next grab a medium bowl and spoon out 2 tbsp of tamarind sauce into the bowl (make sure to not get any seeds or big lumps) if using store bought tamarind paste use 2 tbsp, then add cane sugar, lime juice, rice vinegar, soy sauce and Sriracha and minced garlic. Whisk together until smooth and set aside.
3.Prepare the rice noodles according to the directions on
package. *The rice noodles I purchased at the asian market required for 6-8 minutes of soaking in hot water. * Its okay that the noodles feel a bit firm (al dente!). Noodles continue to cook in the pan with the sauce. (Recipe cont in comments. ✨)

🌱😍 Who wants a plate like this? 📷 by @earthofmariaa 🚨🚨Recipe: preheat the oven to 200 degrees C/390 F. then chop two medium potatoes into wedges, toss them in some salt, garlic granules and a little bit of maple syrup, and roasted for 30 minutes on a sheet of baking paper. In the meantime, sauté 1/2 of a large onion with a tbsp of tomato pure and some cumin. then add 1/2 can chopped tomatoes, kale, a can of chickpeas, 1 tbsp tamari and some black pepper and stir that for around 5 minutes. Serv with tomatoes, cucumbers, avocado and cabbage. Simple but super yum!

🌱Roasted garbanzos with garlic-infused balsamic cherry tomatoes and @lotusfoods brown jasmine rice🌱Have a lovely Tuesday friends.💚
🌱Recipe: Toss 1-15oz can chickpeas (rinsed, drained) with generous sprinkling of garlic salt and cayenne pepper. (Add a little olive oil if desired.) Roast at 400F until golden and slightly crispy. Meanwhile, add 2 tbsp olive oil and 4 sliced garlic cloves to a cast-iron Dutch oven (or other non-stick or cast-iron saucepan) and heat on low until garlic turns a pale gold. Add a generous sprinkle of red chili flakes and 1-lb carton cherry tomatoes (sliced into halves). Continue to cook on medium, uncovered, until tomatoes release their juice and sauce thickens, about 15 minutes. (Stir regularly.) Mix in 2 tbsp balsamic vinegar (or to taste) and the roasted chickpeas. Salt and pepper to taste.
I’m usually inspired to make a salad when I have a bunch of random things in my fridge. 💃🏽Today’s concoction includes spring mix, cucumber slices, avocado, pomegranate seeds, roasted beets, roasted chickpeas and some random seasoning (sprinkle of smoked paprika, garlic, sesame seeds and salt). Smoky sweet. 👏🏽
1 can roasted chickpeas, rinsed and drained
1 tsp smoked paprika
1 tsp garlic powder
1 tsp dried onion
1/4 tsp salt
Pinch of cayenne pepper
Preheat oven to 425F. Place drained chickpeas on a clean towel and remove some moisture. Place in a bowl and toss with seasonings to evenly coat. Spread chickpeas out on a lined baking tray and place in the oven for 30 minutes, stirring them around 15 minutes into baking. Remove from oven and allow to completely cool before serving.

the tofu tacos with teriyaki sauce was not quite what I was expecting to be served but sooooooo gooooood! 🤪👍🏼 I’m always a fan of teriyaki/soy kind of sauces and it definitely made the whole dish taste better 😏😛

To make this, I simply
~ Tossed some @frysfamily vegan prawns into the air fryer.
~ Heated up some left over rice with herbs, seasoning & stock.
~ Put together a big leafy green salad with lemon juice.
~ Topped it all with homemade tahini dressing and a sprinkling of hemp seeds to finish
