so i wanted to address something that so many of us struggle with: overthinking. it seems as if almost all of us continuously ponder over everything going on in our lives. we replay scenarios in our heads, trying to come up with ways we could’ve made them go better. we over-analyze other people’s words and try to search for hints and hidden meanings. we constantly remind ourselves of every single task we have yet to complete, despite the work we’ve already put in. we try to predict our future so that nothing comes as a surprise and throws us off track. but all of this thinking is EXHAUSTING.
i’m probably one of the worst overthinkers you’ll ever meet. but there are several things i remind myself on the daily that help to put my mind at ease:
you have no control over the actions and reactions of others.
the past is the past and you cannot change it. you can only do better next time.
when people are genuine, their actions match their words. if a person says one thing and does another, then you know how that person truly feels.
worrying about everything you have to do isn’t gonna help you accomplish anything. just get to work.
God has a plan and you’re going to end up wherever you’re supposed to be. 🦋

Happy Wednesday everyone! So I started off trying to make a coconut curry with these meatballs but holy moly, it was too much work! The flavor of the curry was good but I'm all about convenient, fast & delicious recipes. Too many hours in the kitchen and way too many hours of cleaning. Regardless, the meatballs on their own was a really nice change compared to the regular ground turkey I usually have. Super easy to make, sharing the recipe here for you! :)
Ground turkey meatballs:
2 lbs ground turkey
1/2 small red onion, chopped
4 garlic cloves, minced
1/3 cup fresh cilantro, chopped
2 tbsp arrowroot starch
1 tsp curry powder
1/2 tsp ground coriander
Salt & pepper to taste
Mix all of the ingredients in a big bowl. Shape into meatballs and place on a parchment-lined baking pan. Bake at 425 F for about 16 minutes. Enjoy!
Follow a vision through! There will be highs and lows! But what's cool is after you reach a low you go even higher! In awe at what's happening!!! Speak it, see it, believe it. Everyday I speak my next goal and it's so close! Never ever ever everrrrr give up!
