I poured my heart and soul into this Ragu and god it was worth it. Home reared Mangalitsa pork cooked ever so slowly with smoked pancetta and Lardo. The holy trinity of carrot, celery and onion with bay leaves and thyme. A handful of dried Porcini and tin of anchovies for extra oomph. San marzano tomatoes, a litre of milk and five hours of careful simmering over the stove. The smells of the kitchen have been wafting through the house all day. Tossed through some penne with a splash of pasta water and handful of Parmesan. Perfect antidote after a morning of icy fingers and damp toes.

The last Porcini I think I’ll find this year as the frosts beckon us into winter. Sliced thickly into quarters and cooked very slowly in lots of butter to gently caramelise and intensify. Towards the end in goes a grated clove of garlic, cracked pepper and a handful of three cornered garlic. Finally an egg, making sure to keep the yolk as runny as possible. I ate it on my knees in the garden straight from the pan. Using hunks of chewy sourdough to pick up the mushrooms, dipping them in the yolk and caramelised butter. One of the most joyous meals of my life.

This was no exception, we made a batch that could be stored in the freezer to use for a quick #blwmeal in the future and they went down really well on the day. I think the size and shape of them just make it a really satisfying hold for him as he always jumps in grabs them and enjoys slowly munching away at them! He also really seemed to enjoy this cool piri piri sauce - next time I’ll try the more traditional version with chili peppers to see how he gets on!! 😉
He ate everything on this plate, although I did chop the #tomatoes down a little more for him as they kept popping out his mouth! For those who want to do some #batchcooking, we put them in the freezer before frying and then cook straight from frozen.

Made 8 roll-ups
• 1 red pepper
• Handful of coriander
• ½ tsp of red wine vinegar
• 8 pieces of white bread
1) Roast the pepper in the oven whole (seeds and stalk removed) in the oven at 175°C for about 25 mins.
2) Once the skin has blackened remove and pop into a blender with the coriander and red wine vinegar and blend to a smooth paste.
3) Remove the crusts from the bread and roll very flat with a rolling pin. Then spoon the piri piri filling into the middle of the bread and roll up into a Swiss roll.
4) Then briefly fry with a little unsalted butter until brown all over.
