Imagining our metamorphosis... This one is beautiful, pure and simple, a rare animal called Braucol aka Fer Servadou aka Mansois...
My second one after Domaine du Cross, East of Cahors.
Stéphane Lucas is very passionate about organic farming applying biodynamic principles at his tiny .77 ha estate in Gaillac, Southwest France.
So passionate, as a matter of fact, that he finds Gaillac AOC laws and regulations regarding yields and organic farming not strict enough.
He bottles his as IGP des Côtes du Tarn:)
Anyhow, it’s what’s in the bottle that matters and this one is a pure joy to drink:
vibrant blackberries & raspberries, savory herbal and spice, stone and iron notes with a hint of barnyard.
Bright acidity and lovely texture show a certain lightness of touch and complement its mineral aspects without heaviness.
Instantly you ‘know’ all his other wines will be as exciting and worth the search:)
Great with the dish especially with stewed red & yellow peppers and fresh thyme, cutting through the richness of the Salmon, oh so nicely! 🍷🍷🍷😋👌#selectionmassale
Itinéraire d'une greffe, futur cep...
Notre travail à la vigne se poursuit, avec les mesures de rigueur en place. Au programme, trous et mise en terre de nos plants de vignes! Sous la surveillance d'Orca... 🐶

MARCH WINE CLUB IS IN!
As we head towards Spring, we at Veritas Studio Wines have been searching for the next great set of wines for the Wine Club. As you know, French, Spanish and German wines have increased in price due to tariffs installed by the White House so we searched beyond. This month - we looked at Portugal. A great wine-making nation where tradition meets innovation when it comes to wine-making. We enjoyed the search and I think our reps did too - since nobody asks them to bring these wines out. We found some beauties including a refined red blend from Beiras Atlantico made from the famous BAGA grape from wine-maker João Portugal Ramos at Quinta de Foz de Arouce. Mellow and relaxed due to some modest aging and cellaring. From wine-maker Pedro Marques at Vale da Capucha a more modern and organic wine from TOURIGA NACIONAL hailing from Lisboa. Will satisfy those who look for something a little more energetic and angular. And we feel sparkling wine does not get it’s due often enough - so we included a Pet Nat from Tiago Sampaio at Folias de Baco, made from PINOT NOIR - unfiltered and unfined from Alto Duoro. Bright and just a notion of Champagne. Three great wines from a wine-making country even we are trying to get to know better.
A $70 value for just $55. A 21% saving. Plus our famous wine notes, and a nod to football. Guess who featured this month? And of course 10% off other purchases made during the month. A very good group indeed and available now. Remember - each purchase is a chance to win - and this month the prize is a bottle of Portugal’s most famous wine - Vintage Port. You can buy once, twice - or more.
So - there it is - Portugal - a great wine-making nation and a great football nation too! March Wine Club is in!

Stumbled upon a nice little tasting from @selectionmassale portfolio @flatironwines this evening featuring a wonderful white called Nosiola, indigenous to Trentino in northern Italy. (The only other Nosiola I tasted was by Elisabetta Foradori, their neighbor)
Noarna Castle, also known as Castelnuovo, was built in 12th century on the very grounds of previous fortifications dating back to Roman and Lombard times.
It’s located half way between northern tip of Lake Garda and city of Trento, along the River Adige.
The castle is with Zani family since 1970, crazy right!? Marco has been tending to his vineyards organically since 2008 and making wine in the castle cellars.
The vineyards are at 350m elevations with east/southeast exposure with soils composed of limestone, silt, porphyry, basalt and slate which gives the wine profound mineral backbone.
It has that fresh alpine quality with aromas of white flower and herbs, citrus and apple with hints of nuttiness, saline and crushed rock. Very bright and pretty yet complex and persistent on the palette.
I’m curios to taste their other bottlings - Teroldego, Lagrein, SauvBlanc, Salvanel white blend.. #winegeek#winetime#winetasting#winepairing#winestagram#sommelier#instawine#winepic#winetravel#foodandwine#sommlife#winewinewine#grapemagic#sommlife#nosiola#nogaredo#castelnuovo#selectionmassale

Different times call for different wines!
Here is a trio which are partially inspired by these strange times we currently live in. Wines that are slightly wild, expressive and attention getting. We start with the Vale da Capucha “Fossil”, 2016 Touriga Nacional blend. Just fine with a touch of chill - super pure, but bursting with flavor and wild aromatics. Bramble, blackberry, just spicy. Next - From our friends at Fifi - the “Que Pasa?” Syrah rosé. Stephane Morin of Domaine Leonine made from 30 year old vines using carbonic maceration. Morin is a master of making refined wines seem easy and common sense, natural if you will. Bioydynamic farming and bottled without sulfites, fresh, energetic, slightly savory and totally delicious. Big flavors. Finally, a first for me - Raboso - Frizzante - from the Euganean Hills of Veneto, unfiltered, rhubarb, fresh bay leaf and plenty of barnyard - Ca’Orologio produces an eye-opening wine which at first you’re not sure about - 60 months on the lees - but the deeper you get, the more you like it. To me - like a refermenting bottle of burgundy - weird but wonderful.
And there are more coming!
Be safe - Be smart - Be clean.
10 CHAIRS - A TRIP TO MAGICAL BALI!
Every week or so, we sharpen our wine mind to help our friend Chef Patricia Williams and devise wine pairings for her 10 CHAIRS menu. We have been assisting Chef for several years ago - and we enjoy the challenge of coming up with a selection of wines that enhance her delicious and original offerings. This last week was a trip to the South Pacific, where as you can guess - wine is not part of the culture. The dishes are exotic and emphasize a balance of salty, sweet, sour, bitter, spicy and astringent. Tamarind, lemon grass, coriander, chili, coconut - not exactly Lyon or Barcelona! So we had to think extra hard - and come up with pairings that would enhance the dishes while allowing the wines to stand on their own! Viola!
Urab vegetable salad, coconut dressing, long beans, chinese bean sprouts, grated coconut
Chateau Fontareche, Vieilles Vignes, Roussanne/Grenache Blanc, Corbieres, 2017
Chicken sate, marinated in coconut milk
Pares Balta, Blanc de Pacs, Paralleda/Xarelo/Macabeu, Penedes, 2018
Sambal Udonga - Spicy sauce, prawns, green pepper chili, tamarind, fried shallots, galangal, chili peppers
Jeremy Quastana, L’Insurgé, Gamay/Cot, VdP, 2018
Coconut rice pudding
Vignoble du Reveur, La Vigne en Rose, Gewurtztraminer/Riesling, Alsace, 2018
Perfect pairings all around we’re told - Four courses with wine for only $100 a person. A great treat and a real bargain too. Book early. Book often. Check out Chef William’s 10 Chairs at https://www.10chairsnyc.com

Since 1998, Cyril Testut has presided over the family estate in Chablis, which was established by his father Philippe in 1967. Their roots however can be traced back even farther as Philippe’s father was one of the first to start replanting in the region after WW2. However, to Philippe’s chagrin, his father sold off his vineyards and Philippe had to begin from scratch. Today their excellent vineyard holdings are comprised of old vines from selection massale in the Côte de Bréchain, 1er Cru Forêts, 1er Cru Montée de Tonnerre, 1er Cru Vaillons, and Grand Crus Grenouille and Blanchots. These ideal exposures are perfect for obtaining wines of exceptional balance between maturity and minerality.

#sancerre#selectionmassale#sauvignonblanc#greffage#virose#artisanal#pepinieriste#patrimoine #génétique #resistances#recherches#experimentation#vieillevigne#winelover#instawine
