Made this super easy 𝘛𝘩𝘢𝘪 𝘤𝘩𝘪𝘤𝘬𝘦𝘯 𝘴𝘢𝘭𝘢𝘥 𝘸𝘪𝘵𝘩 𝘱𝘦𝘢𝘯𝘶𝘵 𝘴𝘢𝘶𝘤𝘦 for lunch yesterday & had leftovers for me and for Tom to take to work 💚🥜 You only need a few ingredients and minutes to make👌🏼 Keeps best with the salad and sauce stored separately!
𝐒𝐚𝐥𝐚𝐝: 1-2 lbs chicken (cooked and shredded), 8 oz bag @traderjoes organic green/purple cabbage & carrot mix, 1 red pepper (diced), 3-4 green onions (diced), 2 tbsp cilantro (chopped)
𝐒𝐚𝐮𝐜𝐞: 1/3 cup peanut butter, 1/4 cup water, 2 tbsp soy sauce or coconut aminos, 1-2 tbsp maple syrup, garlic/ginger to taste, 2 tsp hot sauce (optional)

Peanut butter sugar free chocolate frosting
8oz of cream cheese, I used @nancysyogurt
1/3 cup of vanilla bean ghee, I used @fourthandheart
1/3 cup @lakantosweetener sugar free powder sugar
3 tablespoons of raw cacao powder
2 tablespoons of peanut butter 🥄
set cream cheese on the counter for 10-20min, and melt ghee (room temp) combine all ingredients together and mix well, ENJOY!
I used @swervesweetie chocolate keto cake mix. I sub the coconut oil for ghee & the water for coconut yogurt or almond milk.
So I did a big batch cooking marathon at the weekend and this Flavourful Slaw has lasted up until tonight... after having some at every meal.
Took 5 minutes to make and again so simple. With the weather being as nice as it is... I love having salads and bits and pieces like this that you can just pull out of the fridge and enjoy without any hassle. Yet they still taste fresh and tasty days later.
To give this a try you will need...
1/2 red cabbage
2 fennel bulbs
1 red onion
1 clove of garlic crushed
Juice of 1 lemon
250ml of yoghurt (or dairy free option)
1 tbsp of apple cider vinegar
2tbsp of olive oil
1 tbsp of water
2 tbsp of mustard
100g of nuts - I threw in cashews, almonds, peanuts and sesame seeds
Step 1. Warm / gently toast your nuts in a frying pan for a couple of minutes then leave on the side to cook.
Step 2. Put in to a large bowl your sliced cabbage, fennel, onion and apple. Pour over your lemon juice and mix in.
Step 3. Mix in a cup the garlic, vinegar, yoghurt, oil, mustard and water until it comes together. Pour this over your cabbage etc and really make mix to make sure everything is coated in this dressing/ sauce.
Step4. Pour in your nuts and mix in... then serve.
I’ve had this ‘cling-filmed’ and used it for 4 days.
Aware you might not have all these ingredients but maybe one to save and try as the weather improves.

Enjoy a simple chopped salad dressed in a zesty lime vinaigrette!
This salad is derived from the famous Fattoush salad, which is frequent appearance on the Middle Eastern meal table. I dont add the pita pieces but its optional if you like them you can do so.
The salad is very versatile; there’s no right or wrong. You can add whatever you like with the greens and dressing.Sumac is a maroonish Middle Eastern spice that is tangy and lemony It gives a jolt of fuscia color and intriguing flavor which is awesome! .
Fresh greens (mint, coriander, lettuce, mesclum, baby spinach, mache, rocket leaves etc)
Ground sumac optional
Himalayan Pink Salt
You can also add Red onion or green onion, carrot, Cabbage, Bell pepper, Zucchini or yellow squash, Parsley, Pitted olives and the list to being healthy is endless...! Tip:
Add more protein to your salad by adding cooked chickpeas or lentils to make it a full meal!
Place your green leaves from @spinneysdubai in large salad bowl, add chopped cucumbers, tomatoes and raddish.
Next start adding dressing; by mixing chopped
garlic, olive oil , lime juice, sumac powder, vinegar, peppers and salt.
If you are serving right away you can add everything altogether otherwise prepare the dressing seperately.
Gently toss until all of the ingredients are lightly coated in dressing. Sprinkle chopped Feta and Serve promptly.
Optional-Toasted Pita: Preheat your oven to 200C for 25-30 mins. On a baking sheet, toss the torn pita with 2 tablespoons olive oil until lightly coated. Bake in the oven until the pieces are very golden and crispy, tossing halfway 10 minutes. Set it aside to cool.
This salad is best consumed soon after making, since the dressing will wilt the lettuce and soften the pita with time.

Shrimp Salad with Fresh Strawberries 🍓🍤🌱 .
Shrimp + Fresh Strawberries + Limey Vinaigrette = OBSESSION .
Use frozen, thawed shrimp.✔ Makes about 4 servings
1.5 lbs. raw shrimp, peeled and deveined
1 Tbsp olive oil or avocado oil
sea salt and fresh ground black pepper, to your taste (about 1/8 teaspoon each)
1/2 cup roughly-chopped pecans
2 heads crisp Romaine lettuce, chopped
2 cups fresh strawberries, quartered
1 small red onion, sliced
1/3 cup crumbled feta, parmesan, cotija, or goat cheese of your choice
1 Tbsp fresh chopped parsley or cilantro .
For your Homemade Limey Vinaigrette:
2 cloves fresh garlic, minced
1 tsp Dijon mustard
juice and zest of 1 large lime
1 Tbsp raw honey
sea salt and pepper, to taste, teeny tiny pinch of each
4 Tbsps extra virgin olive oil
In a small bowl, whisk to combine all of your vinaigrette ingredients.
In a large skillet or frying pan, heat oil over medium-high heat. Add shrimp in a single layer and sprinkle with sea salt and pepper. Cook for about 4 minutes while tossing and stirring, until they turn pink and opaque.
In a large bowl (or 4 separate serving bowls) equally add lettuce, strawberries, cooked shrimp, cheese, pecans and onion nicely as shown. Sprinkle salad with chopped parsley or cilantro.
Just before serving, drizzle your vinaigrette over the salad and gently toss.
Serve with a few extra lime wedges.
