I’ve come to the realisation recently that I no longer have time for food styling/photography/editing/publishing on this page during the week. Also have come to the realisation that a lot of what we see on social media is fake and I want to be real. So from now on, many of my photos won’t be perfectly shot, lit or edited, but they will be real and it will still be me behind the lens (most of the time) 📸 So here’s my unedited dinner comprised of a bunch of stuff I’ve got left in the fridge and need to use before being away this weekend. As always it was delicious, nutritious, cheap + cheerful and here’s the recipe incase you want to make it for yourself 👇🏼
🍴Ingredients (makes 3 portions)
- 1 red onion (chopped finely)
- 2 garlic cloves (chopped finely)
- 1 courgette (chopped finely)
- 2 sweet potatoes (diced)
- 1 red pepper (chopped finely) - 200g chickpeas (half a tin)
- 1 avocado (diced)
- Handful of rocket
- Handful of olives - Olive oil
- Seasoning + spices (I used mixed herbs + chilli)
- 1 tsp pesto
- Juice of 1/2 lemon - Pine nuts .
- Depending on how much time you have, either place your sweet potato in the microwave for 5 minutes or in the oven for 45 minutes.
- Meanwhile, fry your onion, garlic, courgette, red pepper + chickpeas on a high heat with a good glug of olive oil for 5-10 minutes. - Whilst that’s cooking, place your rocket, avo and olives in a mixing bowl and set aside.
- Once cooked, add your sweet potato + seasoning to the pan.
- Mix together a glug of olive oil, pesto, lemon juice + seasoning and add to your pan and coat well.
- Add all hot ingredients to the cold mixing bowl and mix well.
- Add contents to a bowl and top with pine nuts + hummus.
- Serve and enjoy!
