Sometimes, only a simple pasta dish will do
This dish starts with a super simple batch of tomatoes confit. Add some pasta, mozzarella and fresh herbs with some pasta cooking water and you have the simplest and tastiest dish around 🙌
Pasta with Ciliegine and Slow Roasted Tomatoes in Olive Oil with Roasted Garlic and Herbs
Preheat oven to 400F. Put 3 or 4 cups of cherry tomatoes in a baking pan and cover with olive oil. Cut a head of garlic in half and nestle that in. Add a handful of fresh herb sprigs and tuck them in as well. Season with salt and pepper and chili flakes. Roast for 1 hour.
Meanwhile bring a pot of salted water to a boil and add in any pasta. Cook until al dente and drain, reserving 1 cup of pasta cooking water.
When the tomatoes are done, lift them out with a slotted spoon and add to the pasta. Add as much olive oil as you want and squeeze the roasted garlic cloves into the pasta as well. Season with salt, pepper, chili flakes. Add the Ciliegine, 1/2 cup fresh chopped parsley and some fresh basil. Toss to mix everything, adding some pasta cooking water if you want to loosen it up a bit. Check for seasoning and serve with pesto (either homemade or store bought).

SWEET CHILLI HALLOUMI 🌶️. Try brushing your halloumi with sweet chilli sauce before pan frying/grilling for an epic sweet salty combo 😍. Simply slice 40g halloumi cheese (I use a crinkle knife to get the grill line effect without having to use a griddle pan). Brush all over with 1 tsp sweet chilli sauce, heat a non-stick pan on a medium heat with a little oil/oil spray and add the halloumi. Pan fry on each side for 2 mins, being careful not to let it catch, then serve & enjoy 😋. Yum!

🌱Chickpea Massoman Curry’- loaded sweet potatoes🌱
This curry pairs well with any type of sweet potato. (I used Japanese sweet potatoes.) The sweetness of the potato compliments the bold flavor of the curry perfectly. I highly, highly recommend this combo. 🌱Recipe: (Bake sweet potatoes.) Sauté 1 finely chopped yellow onion in a little neutral oil or veggie broth until translucent, about 5-7 minutes. Add 3 minced garlic cloves, 1 tsp finely minced fresh ginger, 1 tsp five spice powder, 1 tsp cumin, 1/4 tsp turmeric, 1/4 tsp cayenne. Sauté another minute until fragrant. Add 2 chopped medium ripe (slightly soft) tomatoes (roma or plum) and sauté another minute. Add 1 cup vegetable broth and mix. Simmer about 10 minutes, covered. (Optional: blend curry until smooth and return to saucepan.) Mix in 2-3 cups cooked chickpeas (depending how saucy you want the curry) and 1/3 cup whole peanuts. Add coconut milk and salt to taste. Stir and cook another 5-10 minutes. (I toasted the peanuts in a little oil over stovetop until lightly browned before adding to curry.) Load desired number of sweet potatoes with curry and top with fresh cilantro. Eat any leftover curry with preferred grain. .

Lemon and garlic tuna pasta, ready in just 10 minutes. This dish is so full of flavour and a great way of serving convenient, store cupboard tuna to baby! ⠀⠀⠀⠀
Tip: To speed up the cooking time when making pasta: grab your saucepan and pour in the tenniest amount of water in the bottom and get it on the hob on a high heat. Meanwhile boil the kettle, once boiled the little bit of water in the pan should be simmering, so when you add the boiling water, the whole lot comes back up to a boil much quicker! ⠀⠀⠀⠀

• 200g of dried pasta ⠀⠀⠀⠀
• 1 teaspoon of garlic infused olive oil ⠀⠀⠀⠀
• 2 spring onions ⠀⠀⠀⠀
• 3 cloves of garlic, minced ⠀⠀⠀⠀
• 1 unwaxed lemon ⠀⠀⠀⠀
• Tin of tuna in spring water 145g ⠀⠀⠀⠀
• Black pepper ⠀⠀⠀⠀
• Small knob of butter ⠀⠀⠀⠀
• 40g of grated cheddar cheese ⠀⠀⠀⠀
1) Get your pasta on to boil. ⠀⠀⠀⠀
2) Mince the garlic, finely slice the spring onion, zest the lemon, and grate the cheese and set aside. ⠀⠀⠀⠀
3) 5 minutes into the pasta cooking, heat the garlic oil then sauté the minced garlic and spring onions. Before the garlic starts to catch, add the tuna (water and all) and stir. Add the lemon zest and the juice too along with the knob of butter and freshly ground black pepper. Add a ladle of the pasta cooking water and let it all simmer. ⠀
4) Once the butter has melted, add the cheese, stir then add the cooked pasta. One final stir and serve. ⠀⠀⠀⠀

Here you have the recipe:
• 5 dl coconut milk
• 2 dl water
• 70 g coconut sugar
• a pinch of salt
• 45 g cacao powder
• 120 g dark chocolate
• 1 tsp agar agar
1. Place milk, water, sugar and salt in a saucepan and heat over medium heat.
2. In a bowl, whisk cacao powder with 4 tbsp of water until lumps free then pour into the milk mixture and stir.
3. Add in the chocolate and stir until dissolved.
4. Place agar agar in a glas, add in 1 tbsp of water, stir and pour into the chocolate mixture.
5. Bring the mixture to a boil and boil for 1-2 minutes.
6. Pour the mixture into a mold, let it cool completely and let it rest in the fridge for 3-4 hours.

YES 🙌 I like to add greens to every meal, even breakfast, and today what I had was broccolini so that’s what I added 👌 I don’t really do specific “breakfast” foods... Food is food any time of the day haha and it’s not unusual for me to have wild fish and broccolini in the morning! 😅🌟
Sometimes my hair flies into frame and I don’t hate it. True story: when I first learned photography on my dad’s old film Pentax K1000, I used to fling my hair into the frame intentionally because I liked the ethereal and flawed look it created. Light leaky and filmy. Shooting for brands, I think I stopped tapping into that exploratory version of me as a photographer. Now excuse me while I go pull out all my film gear again ✨
