Figuring out what to make for lunch (and dinner, tbh) takes way longer than it should. I stand strongly behind the fact that it’s the hardest meal of the day to figure out. Anyone with me?!
You want a lunch that will have veggies, protein, carbs and healthy fats (yes, *all* of these things) to keep you full, a lunch that’s easy to make and portable, and most importantly, one that tastes good 🙌🏻
So when I figure something out that’s a major lunch WIN, you know I have to share it with you! This Fall Farro Salad with Arugula, Grapes and Walnuts was the best lunch I’ve had in while! Easy recipe below 🙃
1. Preheat oven to 400 F. Trim ends of brussels sprouts and slice in half. Drizzle with olive oil, salt and and pepper and roast on 400 F for 30 mins.
2. While brussels are in oven, cook farro per package directions (about 15 mins).
3. Assemble salad: add arugula, sliced red grapes, chopped walnuts and crumbled feta. Add cooked farro and roasted brussels. Toss in dressing of your choice (I used a creamy Greek yogurt dressing!)
