822. Ina's version of Cioppino filled with mussels, cod, shrimp, and scallops in a slightly spicy, tomatoey seafood stock is absolute perfection! This was my first encounter with this seafood stew, but it most definitely won't be my last. It does require a time commitment, but you can easily split the work over two days - making the stock and soup base one night and then day-of just warm the soup, add the raw seafood and cook for 10 minutes. Happy Wednesday! Summertime and seafood is one of my favorite combos 🙌!! I don’t care if it’s 90 degrees outside, life is good when there is a bowl of cioppino in front of me (and the AC blasting nearby 😄)! Loaded with shrimp, haddock, scallops, and mussels, this is my favorite summertime soup🍵. I love it with a huge chunk of crusty bread to sop up all the yummy broth!! 😋
I have to come clean, I don’t eat whole mussels, but I love how the shells make the dish look. Anyway, there is always somebody willing to eat them for me!💕💕😂
