It’s come to my attention that an “anonymous tipper” is convinced I don’t feed my children. So here’s the homie, who asked SO sweetly if I could do up his ramen bowl with all the fixin’s I just couldn’t say no. Even tho I’m apparently in the business of starving children. 😑🙄

Guys, K I D S are tough 😩 they’re currently on a “I hate all the #healthybreakfast foods I used to like” kick 🤪 and all they want is #bananas 🍌 + #sprouted#almondbutter 🤨.
They’re happiest with #fruit but I’m just not good with that for every day so.... I keep trying....
I made them these #cassava#blueberry#muffins 👆🏼by @realfoodforager 🧁.
I will post #recipe 👇🏼 but I made some changes (natch 💁🏻♀️).
I halved the #maplesyrup and used #blackstrapmolasses and I don’t love baking with #eggs so I made it #vegan with #flax and #chia 🥚🥚🥚. I also made a few with #carrots 🥕 + #cacaonibs .
At first, I was THRILLED!! My 5 yr old said “these are really good mom 👍🏼” (she legit even gave me the THUMBS UP) but then I noticed they only ate half one of one and left the other 🙄 “I just don’t like the bottom, mom” (I mean, okayyyyyy, #muffintops are the BEST PART....) but these were SO GOOD!!!.
PS I’m eating muffins EVERY DAY for ✌🏼 weeks 🤨🤨.
3/4 cup organic #applesauce
1/2 cup #coconutmilk
3 Tbsp ghee or butter or vegan #butter
2 tsp vanilla extract
1/2 cup maple syrup
1 1/2 cups #cassavaflour
2 tsp baking soda
1 tsp salt
2 cups #blueberries (fresh or frozen).
Preheat oven to 325º F
Prepare muffin pans with paper cups
In a food processor add all the wet ingredients together and mix
Add the dry ingredients except the blueberries and combine well
Pour batter into a bowl
Fold in the blueberries
Use a tablespoon to add to paper muffin cups a little over half full
Bake for 30 minutes and check – if too browned, cover with oven safe cover and bake another 5 minutes or until a toothpick comes out clean
Cool on a rack
Refrigerate or freeze
Tip: Use small blueberries as these will hold together in the muffin best.
