warming winter salad 🤤 most of the time salads and winter arent in the same sentence, but this bowl is nourishing with warming spices and roasted vegetables to make you feel satiated and satisfied without feeling weighed down like some winter meals can make us feel!🤭
this is a big bed of mixed lettuce topped with smoked paprika and cumin roasted carrots and pumpkin 🥕 (the yummiest spice combo to rub onto roast veggies), quinoa cooked in freshly grated turmeric + @greenestreetjuice vegan broth (i highly recommended cooking your quinoa or rice in a good quality broth it honestly is a taste GAME CHANGER🤤and this broth has loads of added spices and nutrient dense ingredients⚡️), cherry toms for some fresh crunch, raisins for a touch of added sweetness, loads of parsley and a tahini, maple syrup, smoked paprika and lemon dressing ✨ so SO simple, filling and delicious! Salad bowls dont have to leave you feeling hungry and cold!

2 cups mashed banana (3 bananas)
1 teaspoon vanilla extract
1/6 cup pure maple syrup
¼ cup oil of choice
1/2 cup chopped dates
2 cups plain flour, sifted
2 teaspoon baking powder, sifted
1 teaspoon ground cinnamon
1. In a medium bowl, mix together the banana, eggs, oil, syrup and vanilla. Mix well to combine. Add the banana, dates, flour, baking powder and cinnamon. Stir to combine.
2. Spoon the mixture into a medium loaf tin lined with baking paper. Bake for one hour or until cooked when tested with a skewer. Cool in the tin for 20 minutes before turning out onto a wire rack to cool completely. 🍌🍌
