TBH, I don’t follow any food rules or diets. I believe food is meant to be enjoyed, and not regimented. But, I do like routine and there’s certain things that have worked really well for me, which I openly share in this space with you guys. One of them is sticking to a light, but satisfying dinner. I do mostly plant-based or vegetarian at night and stick to protein-heavy meals at lunch time. I’ve lately been on a salmon and roasted squash kick; I also like chicken and olives and jasmine rice. 🙃🙌🏻💣 Mornings are usually carbs, healthy fats and fruit. I am not afraid of all the natural sugars in fruit. I eat tons of it daily & it works for me.
This quinoa salad makes for a great quick dinner, and can be easily customized: you can add tofu, tuna or salmon! It has steamed then roasted broccoli, crunchy bell peppers in every color, sweet cherry tomatoes, crumbled feta, the best vinaigrette and the most flavorful quinoa cooked in bone broth. So funny story when I made this pasta my mom also made non-vegan penne alla vodka the day before and there were some leftovers in our fridge. She came home hungry one day, she saw my leftovers in the fridge didn’t even realize they weren’t her leftovers and proceeded to eat half of the pasta that I made. It wasn’t until she went to put the container back in the fridge that she realized she ate the “wrong” pasta haha. So if that doesn’t tell you how good this sauce is I don’t know what is.
Doing the ebook was fun because I really expanded my cooking realm. I rarely cook with alcohol but it is actually not all that hard and overwhelming as I thought it was.
